Grain Free, Paleo Pancake Recipe



Ingredients :

Wet: 4 eggs 1 cup of light coconut milk from a can (trader joes is good) 2 tbsp of maple syrup

1 tbsp of pure vanilla extract

Dry: 1/2 cup coconut flour 1 tsp baking soda

Pinch sea salt Pinch of cinnamon

Directions

1) whisk eggs, milk, syrup and vanilla until all blended

2) add all dry ingredients to the liquid mixture ( no need to mix dry ingredients first)

3) stir until well combined (I use a fork to blend)

4) let batter sit for 5 minutes to thicken ( mixture sometimes gets thin. To thicken, add more coconut flour or pinch of psyllium husk to liking ) optional: add some orange zest to mixture

5) heat an iron griddle on low-medium heat and grease with coconut oil or grass-fed butter 6) pour desired amount of batter onto pan ( I usually do small to medium size)

7) if you want to add filling, immediately add chocolate chips or blueberries

8) once pancake starts to bubble, check color underneath by slowly lifting edges with a spatula.

9) once color is golden brown, flip carefully keeping spatula and pancake close to pan (mix is very light because it is grain free and tends to break )

10) cook on other side for a minute longer or until golden brown

11) the first pancake tends to stick to pan, so I suggest using a small amount. all pancakes after that turn out to be great

12) serve with maple syrup, cut up strawberries, grass-fed butter, coconut whipped cream
